Magaya is a traditional Andhra-style mango pickle, renowned for its tangy and flavorful profile. Left to rest for a day, the mango slices begin to release their juices, which are integral to the pickle’s distinctive taste. The slices are then sun-dried for several days, allowing them to achieve the perfect texture – neither too soft nor too dry. The next step involves spicing up the mango slices with a blend of mustard seeds, fenugreek, and chili powder, creating a rich and aromatic base. Unlike the mustard-heavy Avakaya pickle, Magaya has a unique, sharp tang that pairs wonderfully with hot rice and ghee.
